Peanut Butter Protein Granola (#2)

Ingredients
3 1/2 C puffed kamut1/2 C rolled oats1/2 C vanilla whey protein 2 T peanut flour or PB22 T flax1 T vanilla extract3 T sugar free maple syrup1/4 C unsweetened applesauce
Directions
Preheat oven to 300 degrees.
In a small bowl, combine flax with 3 T water and let sit.
Meanwhile, in a large bowl, combine first 4 ingredients. To flax, add vanilla, syrup and applesauce and mix well. Stir flax mixture into puff mixture and stir to coat. Spread in clumps on a lined baking sheet (with silpat or parchment) and bake about 15 minutes, stirring every 5 minutes.
Cool completely and store in air-tight container.
