1 cup quinoa (blended in my bullet to make flour)1 cup whole wheat flour (also blended to make finer)1 egg1/2 cup of mashed kiwi or applesauce1/2 brown sugar1/2 tsp baking powder1/2 tsp baking soda1/2 tsp salt3 ripe medium bananas1/2 cup pumpkin seeds or whatever kind you have
Preheat oven to 350 degrees. Blend quinoa to create a flour. Blend whole wheat to make it finer. Add wet ingredients together and mix thoroughly. Add quinoa to the wet and mix until quinoa is completely saturated. Add other ingredients and mix well. Pour into loaf pan and put in oven for 45-60 minutes or until a toothpick comes out of the centre cleanly. Place on wire rack to cool.
