Jamaican Mackerel Rundown

Ingredients
2 lbs salted mackerel, onion, garlic, tomato, coconut milk , vinegar, fresh hot pepper, lemon juice.
Directions
soak salted mackerel to allow excess salt to be reduced, saute flaked mackerel with onions, garlic and tomato. Add remaining ingredients (you can use tinned coconut milk or dry packaged & mix if dry coconut is unavailable to make the milk) and allow to simmer for about 20 minutes.
