Thai Pork

Ingredients
1.5 lb. pork chops, cut into stir-fry stripsSauce:1 cup salsa OR picante sauce1/2 cup peanut butter (crunchy is great)2 tablespoons soy sauce2 tablespoons balsamic vinegar1 teaspoon chili powder1/2 teaspoon ground ginger1/2 teaspoon garlic salt1/4 teaspoon pepper1 tablespoon sesame seed, toasted if desired1/2C waterTopping:2 tablespoons thinly sliced green onionsmore sesame seeds
Directions
1. Spray a 12" heavy skillet with spray oil and cook pork strips about 5 minutes or until no more pink is visible.

2. Add all the sauce ingredients. Stir frequently until the peanut butter is melted. Reduce heat to very low, cover and simmer gently for about 30 minutes or until pork is tender - stirring several times.

3. Served Pork over rice or noodles, and sprinkled with green onions & sesame seeds! Wonderful with sesame green beans, broccoli or roasted vegetables!

    Yes, it's easy to just stir in a bit of water at the end until it is thinned to your personal preference. So glad you liked it!

    My daughter made this for me, substituting chicken for the pork. It is fabulous. I am making it for some friends in a couple of days. Side salad and broccoli round out this dish very nicely. - 8/17/11
