Cranberry Walnut Tuna Melts

2 slices Arnold Extra Fiber Bread1 6oz can tuna packed in water1/4 c. grated parmesan cheese1/4 tsp garlic powderblack pepper and salt to taste 1 T light mayo 1 1/2 tsp prepared yellow mustard1/3 c Craisins1/4 c chopped walnuts2 slices swiss cheese
Preheat oven to 400 F
Drain tuna in small bowl, mix in garlic, parmesan, salt and pepper.
Add in mustard and mayo, mix well
Add in craisins and walnuts, mix well again
Cut bread slices in half down center, place 1/4 of the tuna mixture on each slice, top with a half slice of swiss.
Place on cookie sheet and bake in oven for 10 minutes until the bread is toasted and cheese is melted.
Enjoy! serves 4
Suggestions: Serve with fresh fruit or veggies for a healthy lunch!
