Low Carb Chinese Beef Soup

Ingredients
1 lb chopped bok choy1 lb ground beef1 medium onion, chopped1/2 pound fresh mushrooms, sliced1 clove garlic, minced4 cups chicken broth2 Tbl soy sauceBlack Pepper
Directions
Chop the bok choy and separate stalks from leaves.
Brown the ground beef with the onions, garlic, and mushroooms.
Add the bok choy stalks and saute until tender.
Add the broth and soy sauce and bring to a boil.
Stir in the bok choy leaves. Season with pepper and serve.
