Edamame & Feta Spread

Ingredients
1/2 cup fresh edamame, shelled1/4 cup feta cheese, crumbled1 tbsp olive oil1 tbsp waterdash salt5 basil leaves or to taste
Directions
Put edamame & feta in blender. Blend until chunky.
With motor running, add olive oil.
Add water to desired consistency. If you like a smooth spread then add more water.
Add basil leaves to taste.
Serve as spread with crackers, multi-grain bread or with crudites.

    I really like it. I use frozen edamame and I used less oil and more water. I think next time I'll try some horseradish in it to kick up the flavour but it is nice and mild by itself and my kids really liked it. - 8/8/07

    I will definitely make this again, but next time with less oil. It was also difficult to blend such a small amount in the blender. But it was easy to eat! - 3/13/07
