Cranberry-apple muffins

Ingredients
1 large egg1/2 c milk3/4 c unsweetened applesauce1/4 c fresh cranberries, roughly chopped1 T vanilla1 1/2 c whole wheat pastry flour1 t baking soda1 t baking powder1/4 t salt1/4 t allspice1/4 t cinnamon3/4 c Splenda
Directions
Preheat oven to 425 degrees.

In a large mixing bowl beat egg, applesauce, cinnamon, Splenda, allspice, vanilla, milk until well blended. Add flour, baking soda and powder, salt and mix until just moistened, fold in cranberries. Do not overmix. This batter is thinner than some.

Spray a 12 cup muffin tin with nonstick cooking spray and divide the batter evenly into the cups.

Bake for 10-13 minutes or until a toothpick entered into the center comes out clean.
