Pineapple Salsa with Pork Chops

Ingredients

4 small to medium pork chop (or you can use chicken)1 cup diced fresh pineapple1/2 cup chopped red pepper1/4 chopped red onion2 tbsp Cilantro (Optional - I don't add Cilantro to mine)1/2 a Jalapeno pepper. You may adjust this measurement as per taste1-2 tsp of fresh lime peel1/4 - 1/2 tsp Sea Salt
In a medium bowl stir together pineapple, sweet pepper, red onion and cilantro (optional), chile pepper, lime peel and salt.
Serve immediately or cover and chill up to 24 hours. We find it is more flavorful if you let the salsa chill for at least 3 hours.
Pan fry pork chops or as we prefer grill them on the BBQ. (you can also use this salsa with Chicken)
Place Salsa on top of the pork chop and enjoy. I usually make a garden salsa as a side dish making a fresh and flavorful dinner.
