Clear Soup

Ingredients
3.5 litres water4 carrots, roughly chopped1/2 head celery, roughly chopped1 medium onion, quatered2 cloves garlic, crushed2 bay leaves4 springs fresh thyme4 whole cloves6 springs of parsleyLarge handful fresh leaf spinach, coarsley shreddedJuice of 1 lemon1 tsp Dijon mustardFreshley ground black pepper, to taste
Directions
Put all the ingredients, except the lemon juice, mustard and black pepper, in a large saucepan, bring to the boil and simmer gently for 30 minutes.

Strain the liquid into a jug and throw the vegetables away. Return the broth to the pan and stir in the remaining ingredients. Stor the soup in the fridge.
