Italian Portabella Mushroom Burgers

4 Portabella Mushroom Caps4 Kaiser Rolls4 Tbsp. Olive Oil2 Garlic Cloves, chopped2 Oz Parmesan cheese, crumbled1 Tbsp Balsamic Vinegar2 Tbsp Fresh Parsley, chopped2 Small Tomatoes, seeded and chopped
Clean off mushrooms with towel. Remove stems and ribs.
Brush with olive oil and chopped garlic, then season with salt and pepper. Grill three minutes each side over medium heat.
Mix parmesan cheese, parsley, tomatoes and vinegar
Take roll, place 1/2 cup arugula on bottom. place mushroom (cap side down) on bottom bun on top of arugula. Fill cap with cheese/tomato mixture. Put top on burger and enjoy!
