Mediterranean Tuna and Chickpea Salad

Ingredients
Dressing:2 tsp lemon juice2 tsp red wine vinegar8 tsp extra virgin olive oil1/2 tsp dijion mustard1/2 tsp dried oregano, crushed between your fingers1/4 tsp salt1/4 tsp black pepperSalad:1 (15.5oz) can of chickpeas, drained and smashed lightly with a potato masher1 (12oz) can of tuna, drained1/2 cup celery, diced1/2 cup carrots, diced1/4 cup red onion, finely diced11 Kalamata olives, finely minced
Directions
Combine all the dressing ingredients in a small container with an airtight lid. Cover and shake to emulsify.

Combine all the salad ingredients in a large bowl. Toss lightly with the dressing.

Serve on a bed of lettuce, a slice of whole grain bread, or enjoy simply by itself for a high protein and healthy balanced meal!
