Lentil and Brown Rice Soup

Ingredients
6.5 cups of Chicken Broth3 cups Water1.5 cups of Dry Lentils1 cup of long grain Brown Rice2 large carrots chopped1 medium onion chopped2 celery stalks choppedSeason with Salt and Pepper as you like
Directions
Combine broth, water, lentils, rice, onions, carrots and bring to a rapid boil.

Once it boils set the temp at low, let simmer and cover. While it simmers for 40 mins or so, add as much salt and pepper as you like for taste.

    I made this recipe exactly as written. This was very good. I am a huge lentil soup fan. I WILL make it again. Serving size is 1 1/2 cups. I had to recalculated the calories...249 per serving. Calculations were off because it calculates for cooked lentils and rice in the ingredient list. - 4/19/11
