Caribbean Steak and Vegetable with Coconut Rice

Ingredients
3 tbsp pineapple juice2 tbsp fresh lime juice1 garlic clove, minced1 tsp fresh ginger, grated2 tsp honey1/4 tsp crushed red peppersalt3 1/2 oz sirloin steak, sliced into strips2 cups bell pepper (any color), sliced1/2 cup light coconut milk1/4 cup quick-cooking brown rice
Directions
Whisk together pineapple juice, lime juice, garlic, ginger, honey, red pepper and salt. Pour mixture into a 12-inch skillet over medium heat. Add steak and saute 5 minutes. Add bell peppers and saute 8 minutes.

Meanwhile, bring coconut milk to boil. Add brown rice, cover and turn heat to low; simmer 8 minutes. Fluff rice with fork and serve topped with steak and vegetables.
