Oat Pancakes

Ingredients
1 cup quick-cooking oats1 cup all-purpose flour2 Tbsp sugar2 tsp baking powder1 tsp salt2 eggs, lightly beaten1-1/2 cup milk1/4 cup vegetable oil1 tsp lemon juice
Directions
In a large bowl combine the first five ingredients. Combine the eggs, milk, oil, and lemon juice, add to dry ingredients, and stir just until moistened.
Pour batter by 1/4-cupfuls onto a lightly greased hot griddle, turn when bubbles form on top of pancakes. Cook until second side is golden brown.
Makes 16 pancakes.

    Super easy and very yummy! Making this recipe made me say, "why would you buy pancake mix when you can have this instead?"

    I only changed one thing - my husband isn't a big fan of lemon, so I put vanilla in instead. You couldn't really tell. - 3/8/11
