Shredded Beef Chimigangas

Ingredients
2.85 lbs beef chuck roast, trimmed of fat1 small onion chopped3 cloves garlic chopped or pressed1/2 cup water1/4 c vinegar3T chili powder2t ground cumin8 8" flour tortillas2T butter1/2 c shedded cheese
Directions
Place beef in dutch oven with onion, garlic and water. Cover and cook for 20-30 minutes. Cover and cook until water evaporates and meat is brown. In a bowl, combine vinegar, chili powder and cumin. Mix thoroughly and add to beef. Cover, reduce heat to low and simmer for 2 hours or until meat shreds easily. Remove meat from broth, shred with two forks and return to pot. Mix meat well with juices.

Fill each tortilla with meat, roll and place in 9x13 pan, seam side down. Melt butter and brush on each tortilla. Bake in a 500 degree oven for 8-10 minutes. Top with cheese and allow to melt.
