Almonds, 2 cup, groundSunflower Seeds, without salt, 1 cup, hulled Pumpkin Seeds, 1 cup Coconut flake, unsweetened, 3 oz Coconut Oil, .25 cup Honey, .25 cup Salt, .25 tspVanilla Extract, 2 tspCinnamon, ground, 1 tsp Nutmeg, ground, .75 tsp Raisins, .25 cup, packed Dried Cherries, .25 cup Flax Seed Meal (ground flax), 4 tbsp
Food process the almonds, sunflower seeds, and pumpkin seeds until coarse with a few chunks. Add all other ingredients to the mixture and incorporate in a large bowl. Bake at 350 for 20 min on a cookie tray in a 1/2 in flattened mass. Take out of the oven chop up into chunks and continue to bake until golden brown throughout (approximately 10 more min). Let cool and enjoy with coconut milk as a cereal for a great morning breakfast or snack.
