Quinoa with pine nuts

Ingredients
1 cup Whole Grain Quinoa1/4 cup Pine Nuts1 Tbsp. Extra Virgin Olive Oil3 cloves Garlic, minced2 large Scallions, chopped2 cups Chicken Broth1 tsp. black pepper
Directions
Heat oil in medium saucepan, saute scallions and garlic about 2 minutes. Add quinoa and saute about 2 more minutes. Add broth and bring to a boil; reduce heat to low and simmer 15 minutes. Stir in pine nuts and freshly cracked black pepper and remove from heat, allowing to stand about 5 minutes. Fluff with fork and serve.

    This made for an absolutely delicious dinner - thank you! I added broccoli (at the end so it steamed up just right) and then sprinkled just a touch of parmesan cheese on it to serve.
