Veggie Frittata

Ingredients
1 cup egg beaters egg whites2 XL Eggs1 cup chopped sweet onion1/2 cup chopped red pepper1 cup fresh spinach2 oz low fat cheddar1 TBL olive oil
Directions
In a 10 inch skillet
Carmelize onions and red peppers in olive oil
Add spinach until it wilts
Remove veggies and spray pan with Pam
Add veggies back in a single layer
Beat egg whites and eggs together and pour over veggies.
When sides of mixture turn golden brown move to a 350 degree oven for 15 minutes or until puffy and golden
Let set for 2 minutes
Slice into 4 wedges

Serving Size: makes 4 servings, 1 wedge each
