Breakfast Cookies

Ingredients
1-1/2 cup unsweetened Applesauce1 cup brown sugar (not too firmly packed)1/2 cup orange juice (or whatever juice is in the house)3 Tbls lemon or lime juice2 Tbls vanilla extract1 mashed banana1-1/4 cup whole wheat pastry flour1 Tbls baking soda2 tsp cinnamon1-1/2 tsp nutmeg1-1/2 tsp ginger3/4 tsp cloves4 cups gluten free oats2-3/4 cups organic raisin bran (lightly crushed)3/4 cup diced dried apricots
Directions
Preheat oven to 325 degrees

Mix applesauce, brown sugar, juices and vanilla. Mix in mashed banana. In separate bowl, combine flour, baking soda and spices. Stir into juice mixture. Stir in oats, cereal and dried fruit.

Shape dough into flat circles and place on cookie sheet. Bake at 325 for 12 to 15 minutes. (Do not overcook or they will be dry.) Makes approximately 16 cookies.
