9 Healthy Harvest Whole Wheat Blend Lasagna Noodles6 small Sweet Italian Sausage appox 1 lb3 cups marinara sauce2 cups grated mozzarella1/4 Parmesan Cheese3 eggs3 cups low fat Cottage Cheese1/4 cup dried parsley
Boil the sausages about 30 minutes after piercing the skin to release the fat. Pulse in food processor to break up, then brown in skillet. Add marinara sauce and set aside. Put cottage cheese, eggs, parsley and parmesan into food processor and process til smooth.
Put light layer of sauce in baking dish. Add 3 noodles, top with 1/4 sauce meat mixture, then 1/2 cottage cheese egg mix. Top this with 1/3 mozzarella. Repeat again. Top with final layer of noodles and rest of meat sauce. Reserve the last of the mozzarella. Bake for 45 minutes covered with foil. Then remove foil, and top with the remaining mozzarella. Let stand 10 minutes before serving.
