Spinach stuffed turkey loaf

Ingredients
Meat mixture:1.5 lbs 93% lean ground turkey1/2 cup Italian bread crumbs1/2 cup skim milk1 tbsp. onion powder1 tsp. garlic powder1/4 tsp. salt1/2 tsp. pepper2 egg whitesFilling:1 10 oz. package frozen chopped spinach, thawed and drained1 cup grated 2% milk cheddar cheese2 tbsp. parmesan cheeseTopping:1/2 cup ketchup1 tbsp. brown sugar1 tsp. mustard
Directions
Combine meat mixture ingredients and mix well. Place on a sheet of wax paper sprayed with cooking spray, and pat mixture into a 9x12 inch rectangle. Combine filling ingredients and spread evenly over meat. Roll up from the 9-inch side to form a "log". Press seam to seal. Place roll seam side down in a shallow baking pan sprayed with cooking spray. Bake at 350 degrees for 1 hour. Combine topping ingredients and spoon over loaf. Bake another 30 minutes, or until no longer pink in center.

    Made this for dinner tonight. It was very good! I used horseradish mustard where the recipe called for mustard. It added a nice kick to the sweetness of the topping. I also used plain bread crumbs & added some Italian herbs instead of using Italian bread crumbs. We will definitely make this again. - 1/11/10
