Quick and Easy Sesame Chicken and Noodles

1/3 cup rice vinegar1/3 cup green onions, thinly sliced2 Tbsp honey1 Tbsp soy sauce1 Tbsp fresh ginger, grated2 tsp chili-garlic sauce12 oz cooked chicken, shredded12 oz whole wheat spaghetti or udon noodles, cooked and drained3 Tbsp sesame oil2 medium red, orange or yellow bell peppers, sliced into matchstick-sized pieces
1. In a medium bowl stir together vinegar, green onions, honey, soy sauce, ginger and chili-garlic sauce. Add chicken and stir to coat.
2. In a large bowl, add noodles and drizzle with sesame oil, tossing to coat. Add chicken mixture and toss to combine.
3. Serve with bell pepper strips on top of noodles.
