Beta Booster Cake

1 c. spelt flour½ cup rolled oats (not instant)½ cup cake flour2 tsp. baking soda2 tsp. baking powder2 tsp. cinnamon¼ tsp. salt2 c. coarsely grated carrots1 c. brown sugar½ c. fat free soy or dairy milk½ c. applesauce½ cup pumpkin puree½ cup canola oil
Preheat oven to 350F. Grease and flour two 9” pans or one 9x13” pan
Mix all dry ingredients together in a mixing bowl.
Stir the brown sugar with the milk, applesauce, pumpkin and oil until runny.
Add the sugar blend with the carrots to the flour mixture. Mix just until blended.
Bake for 40-50 min (for 9x13” pan) or 35 min (9” pans) until a toothpick inserted into the middle of the cake comes out clean.
Cool on a counter for 30 min before serving.
