Paleo Banana PB Muffins

* 1/2 cup protein powder (I used two servings pea protein) * 1/4 cup coconut flour * 1/2 cup Paleo Friendly Flour (i used Peanut, could use almond) * 1/2 tsp baking powder * 1/4 tsp baking soda * pinch saltWet: * 3 egg * 200 grams bananas, mashed * 1 tsp vanilla extract * 1 tsp honey (optional, didn't use) * 1/2 dropper Vanilla Stevia * 4 tbsp coconut oil * 1/2 cup egg whites *1/2 cup unsweetened applesauce
Bring all ingredients to room temperature to keep coconut oil from solidifying. Combine all the dry ingredients in a bowl and the wet ingredients in a separate bowl. Slowly combine the dry ingredients into the wet, mixing well. Bake in a 375 degree oven for 20-25 minutes.
Makes 12 muffins.
