Slow Cooker Thai-style Chicken

6 chicken thighs (or a whole chicken)2 cups (approx.) light coconut milk2 cups (approx.) waterThai chili sauce, to taste 1 cup thickly sliced mushrooms2 inches of lemon grass (optional)About 1 tbsp fish sauce
Add all ingredients to slow cooker.
Stir to coat chicken.
Cook for 6-8 hours on low or 3-4 hours on high.
Serve with basmati rice and steamed bok choy or broccoli.
