Pomegranate Whole Wheat Muffins

Ingredients
2 cups whole wheat flour1 cup all-purpose flour¼ cup Splenda2 tbsp baking powder½ tsp salt1 tsp cinnamon1 ½ cups fresh pomegranate seeds3 large eggs (beaten)1 ½ cups 1% milk½ cup unsweetened applesauce½ tsp vanilla extract
Directions
Makes 12 large muffins

Place the oven rack in the middle position. Preheat oven to 375. Spray a 12 slot, non-stick muffin pan with sesame oil. Place the first 6 ingredients in a large bowl and whisk to combine. Stir in pomegranate seeds. In another bowl, combine the eggs, milk, applesauce and the vanilla. Add the wet ingredients to the dry and mix until just combined. Spoon the batter into the muffin pan allowing it to rise right to the top of each slot. Bake for 20 – 22 minutes, or until puffed and golden.

Note: 1 large pomegranate should yield 1 ½ cups of seeds.

    I think the nutritional info must be really wrong. It says it makes 12 muffins. I don't recall ever seeing any recipe with those numbers. Wow, this would be way too much for anyone to be eating! I will make this as it sounds delicious and I love anything made with whole wheat flour. - 11/6/08

    I made them this morning and they were great. I used a litlle honey instead of splenda for the sweetener. I also only used whole wheat flour. My family loved it.
