Carrot Coconut Soup

Ingredients
3 cups chopped carrots3 cups chicken or veg broth1 cup chopped onion1 hot pepper2 tsp cumin1 can of light coconut milk
Directions
Saute onion, cumin and hot pepper for 3 minutes.
Add carrots and broth.
Simmer for 25 minutes.
Add coconut milk. Simmer for 5 minutes.
Blend until smooth.
