Hearty Quinoa Porridge

1 1/2 cups water3/4 cup whole-grain quinoa, rinsed and drained1/4 tsp. sea salt1 tsp. vanilla1 tsp. cinnamon1/2 cup raisins1/3 cup pecans, choppedMilk, cream, honey or pure maple syrup, for serving
Place water, quinoa and salt in a medium saucepan and bring to a boil. Reduce to low, cover and simmer for 10 minutes. Add vanilla, cinnamon, dried fruit and nuts. Stir to blend. You may need to add a touch more water at this point. Cover and cook another 5 minutes until water is absorbed, the grain is soft and the little germ ring is visible. Serve with milk or cream. Drizzle with honey or pure maple syrup. Refrigerate leftovers. Serves 2-4.
You can substitue dried, chopped apricots, dates or plums for the raisins and walnuts or almonds for the pecans. Or, add a pinch of nutmeg to spice things up.
