3 Cabbage Slaw

Ingredients
  • 2 cups Napa cabbage, thinly sliced
  • 1 1/2 cups green cabbage, thinly sliced
  • 1/2 cup red cabbage, thinly sliced
  • 1 tablespoon fresh chives, chopped
  • 2 tablespoons rice wine vinegar
  • 3 tablespoons orange marmalade
  • 1 teaspoon grated fresh ginger root
Directions
1. In a large bowl, mix cabbage with chives.



2. In a small bowl, combine vinegar, marmalade and ginger. Then pour over cabbage.



3. Toss and serve.



Serves 4.

    Good - the dressing is light and refreshing. Slicing 3 different types of cabbages is kind of a pain and wasteful, so I purchased the pre-bagged cole slaw mix and used this dressing instead. - 1/2/08

    I used scallions instead of chives. I didn't think the sauce would be enough, but it was fine. It helps to let it sit for an hour or 2 for the vinegar to start breaking down the cabbage. I will definitely make this again. - 8/6/08

    Delicious! Great idea! I modified it a bit - only used the green cabbages, added some carrots & red pepper. I also added a drop of sesame oil to the dressing & some toasted sesame seeds to the salad. Quite nice! - 7/28/08
