Prawn and leek risotto

Directions
Mix up 1.5 litres of water with the stock and leave in a pan on the stove on a low heat.

Chop the leeks onions and celery and then soften them for 5 minutes in a little of the stock over a medium heat.

Then add the rice and stir in for 1 minute.

Add a ladel of stock every few minutes continually stirring.

After 15 minutes add the prawns and continue stirring and adding stock for a further 5 - 10 minutes.
