Raw Beet Salad with Ginger and Oranges

4 two inch beets, peeled and grated2 large carrots, grated2 oranges, zested, 1 peeled and chopped, 1 juiced1/2 inch ginger root, grated and juiced1 clove garlic, pressed1 Tbsp olive oilsalt to your tasteOPTIONAL ADD INS: (not included in calorie count)grated applegrated peargrated jicama shallots, onion or scallionpecanswalnuts
Put the beets and carrots in a salad bowl.
Zest the oranges into a jar or bowl for the dressing.
Peel and chop one of the oranges, and add it to the salad.
Squeeze the juice from the other orange into the jar/bowl.
Grate the ginger and squeeze the juice from the pulp into the jar/bowl as well. Add the olive oil and salt, and shake or whisk to combine.
Pour the dressing over the salad and toss, then leave it to marinate for 30 minutes, or up to a couple of hours.
