Tuna Noodle Casserole (Gluten Free, Low-Fat, Low-Carb)

Ingredients
1 medium yellow squash1 medium zucchini1 green onion1/2 pint of mushrooms2 cans chunk light tuna1 can Progresso Creamy Mushroom Soup1 Package Miracle Noodles - Angel HairApprox. 2/3 cup cheddar cheese (The calculations for this recipe were done with full fat cheddar cheese.)
Directions
1. Preheat oven to 350 F.
2. Cut up vegetables into chunks.
3. Mix vegetables, tuna, and soup in a mixing bowl.
4. Pour mixture into 8 x 8 inch square pan.
5. Spread noodles over top of mixture.
6. Cover entire dish with cheddar cheese as desired.
7. Bake at 350 F for about 40 - 50 minutes.

    I made this last night (with different noodles, as I don't have any Miracle Noodles and couldn't find them at the grocery store). I threw in some broccoli as well. It's pretty tasty. Thank you for sharing the recipe! I'll have to order the proper noodles and try it again. - 9/30/13
