Rainbow Fruit & Pepper Salad

Ingredients
- 100 g Red, Green, Yellow Bell Peppers, chopped- 1 tbsp red onion, chopped- 1 green onion, chopped- 3 honeydew melon balls- 3 watermelon balls- 3 cantaloupe balls- 1 tbsp pine nuts- 1 tbsp fresh parsley, choppedto dress:- 1 tbsp red wine vinegar- dash of ground black pepper- dash of red pepper flakes
Directions
toss the peppers, onions and pine nuts. top with fresh parsley and melon. drizzle on some red wine vinegar, black pepper and red pepper flakes all to taste. enjoy the crazy combo of flavour!
