AUNT ALICE'S TURKEY AND RICE PORCUPINE BALLS

Ingredients
1/4 c. uncooked white rice1 lb. ground turkey white meat, 97% lean1 tsp. saltDash pepper1 tsp. butter1 tbsp. chopped onion2 tbsp. chopped green pepper2 cans tomato sauce, 8 oz. each1 tsp. Worcestershire sauce1 c. water2 T flour1/2 c water
Directions
Rinse rice. Mix together rice, meat, salt and pepper. Mix well and form 1 1/2 inch balls. Melt butter and saute onion and pepper about 5 minutes over low heat. Pour in tomato sauce and water. Heat to boiling. Add porcupine balls and cover. Reheat to boiling then lower heat and simmer 40 to 50 minutes. To thicken, make a paste of flour and water and mix in and stir until thick.

    This is an old recipe that I got out of my old Betty Crocker cookbook many moons ago. Mine are baked in a covered casserole dish and they are really good. I would like to try quinoa the next time I make them because I don't eat rice anymore. I'll let you know if it turns out. :) - 6/6/13
