Zucchini Apple Bread

Ingredients
2 eggs2 egg whites1/2 c apple sauce1/4 c vegetable oil1 2/3 c packed brown sugar2 c grated zucchini2 tsp vanilla extract2 c all purpose flour1c toasted wheat germ3 tsp ground cinnamon1 1/2 tsp baking powder1 tsp baking soda1 tsp salt1 apple chopped
Directions
Prepare two 9X5 loaf pans with grease and flour or non-stick spray. Preheat oven to 325 degrees.
In a large bowl beat eggs well. Add oil, brown sugar, zucchini, and vanilla: stir well. Blend in dry ingredients. Gently fold in chopped apple. Pour batter into prepared pans. Bake for 1 hour. I have made this into 6 mini loaves ans 24 muffins. For mini loaves adjust cooking time to 40-45 minutes; for muffins 20-25 minutes.
