Cucumber relish with mint and chives

Ingredients
1 cup diced peeled seeded cucumber3/4 teaspoon salt, divided3/4 cup chopped fresh chives1/2 cup copped sweetened flaked coconut2 tablespoons finely chopped mint2 tablespoons finely chopped cilantro2 minced seeded jalapeno peppers2 tablespoons fresh lime juice1/2 teaspoon ground cumin1 teaspoon peanut oil1 teaspoon mustard seeds
Directions
Place cucumbers in a colander, sprinkle with 1/2 teaspoon salt. Toss well. Drain 30 minutes. Rinse and drain, pat dry.

As cucumbers drain, chop fresh chives, cilantro, mint and jalapeno.

Combine cucumber, chives, coconut, mint, cilantro, and jalapeno. Stir in 1/4 teaspoon of salt, 2 tablespoons lime juice, and 1/2 teaspooon cumin.

Heat 1 teaspoon oil in a small skillet over medium-high heat. Add mustard seeds, saute 30 seconds or until seeds begin to pop. Add to cucumber mixture.
Can serve immediately, or chill.

Make 6 servings.

Great with grilled or broiled fish, or as a refreshing side dish for any meal.
