Baked Tilapia with Peppers and Mushrooms

Ingredients
1 T olive oil2 med. yellow bell peppers, thinly sliced1 med. onion, chopped8 oz. sliced mushrooms1/2 c. white cooking wine1 tsp fresh thyme leaves, choppedcooking spray1 lb. Tilapia fillets2 T lemon juicesalt and pepper to taste
Directions
Preheat oven to 450. In large skillet, heat oil over medium heat. Add peppers and onion; cook 10 minutes or until tender. Add mushrooms, wine and thyme; cook 3 minutes. Spray 9x13" baking dish with nonstick cooking spray. Arrange fillets in baking dish. sprinkle with lemon juice, salt and pepper. spoon hot vegetable mixture from skillet on top of fish in baking dish. Bake fish 15-18 minutes or until cooked.
