Tuna, White Bean & Veggie Warm Salad

1 can Tuna, Starkist Chunk White Albacore in Water, 1 can Cannelini Beans,Spinach, frozen, .5 package (10 oz) 1 eggplant, peeled 2 tbsp Olive Oil,2 tbsp Red Wine Vinegar Garlic powderPaprikaSalt & Pepper
Peel and cut eggplant in 1 inch chunks
Heat frozen spinach in microwave
Drizzle olive oil in pan and turn heat to medium.
When pan is hot, add eggplant and season to taste (garlic, paprika, oregano, salt, pepper)
Cook until golden.
Combine drained tuna, drained beans, cooked spinach and eggplant. Drizzle with Red Wine Vinegar.
(optional) top with cheese
Serve!
