2 cups hickory or mesquite chips, 1/4 cup butter, 1 cup white wine vinegar, 1/4 cup dry mustard, 4 tsp brown sugar, 4 tsp Worcestershire sauce, 4 tsp hot sauce, 1 (3 lb) whole chicken, cut into quarters.
Soak wood chips in water at least 30 minutes. Cook butter, vinegar, dry mustard, brown sugar, worcestershire sauce, and hot sauce over low heat, stirring occasionally, 15 minutes or until mixture is heated; do not simmer. Light one side of grill, heating to 250 degrees to 300. Drain and place wood chips in a disposable aluminum pan, cover with foil and pierce the top with several holes. Place pan beside coals. Reserve 1 cup of vinegar sauce to serve with the chicken. Dip chicken in the remaining sauce. Baste every 30 minutes
