Crustless Spinach, Tomato + Feta Quiche

1 Tbsp olive oil 1/2 cup onion, diced 1 Tbsp minced garlic1 1/2 cup frozen chopped spinach, thawed2/3 cup diced tomato 1 cup all whites egg substitute1 egg, beaten1/2 cup reduced fat feta cheese1/4 tsp salt 1/8 tsp black pepper
Preheat oven to 350 degrees F. Spray a 9 inch pie pan with cooking spray.
Heat oil in a large skillet over medium-high heat. Add onions and garlic cook, stirring occasionally, until onions are soft. Stir in spinach and continue cooking until excess moisture has evaporated.
In a large bowl, combine egg substitute, egg, cheese, tomatoes, salt and pepper. Add spinach mixture and stir to blend. Scoop into prepared pie pan.
Bake in preheated oven until eggs have set, about 30 minutes. Let cool for 10 minutes before serving.
Serving Size: 1 large wedge
