Savoury Cheese, Leek and Bacon Muffins

Ingredients
1.5 cups self raising flour1 tbsp sugar50 gms tasty cheese, finely grated1 egg2 rashers streaky bacon, cooked and finely chopped1/2 tsp saltPinch of cayenne pepper1/2 small leek, chopped1 cup milk
Directions
Preheat oven to 210 C.
Mix dry ingredients and cheese into a bowl.
Microwave the leek in 2 tbsp of water for 2 -3 mins until tender.
In a second bowl, mix the egg and milk together.
Add leek and bacon. Then add this to the dry ingredients.
Fold everything together - don't over mix.
Grease and line a muffin tray.
Spoon muffin mix into liners.
Bake for 12-15 minutes.
