Oat Applesauce Muffins

Ingredients
Directions
1 c rolled oats1 c buttermilk1 c whole wheat flour1 tsp baking powder1/2 tsp baking soda1/4 c brown sugar1 packet stevia1/2 c applesauce1 egg
Place oats in small bowl, pour in buttermilk. Let sit for 2 hours at room temperature.
Preheat oven to 375. Grease 12 muffin cups or line with paper.
In large bowl, stir together dry ingredients. Stir together egg and applesauce and then mix with oat/buttermilk mixture.
Mix all ingredients together.
Pour into prepared muffin cups.
Bake in preheated oven for 30 minutes until a toothpick comes out clean
May also add nuts or blueberries before baking.
May also add topping of 1/3 c sugar and 1 1/2 tsp of lemon or orange zest
