Crab stuffed Tilapia filets

Ingredients
8 4-ounce tilapia filets1 can canned real crab1/3 cup diced mushrooms2 ounces soft goat cheeselemon or lemon juice2 cups carrots2 packets Idahoan instant potatoeshoney
Directions
Preheat oven to 425 degrees. Rinse 8 4-ounce tilapia filets in water and then soak in a water/lemon juice mixtures for a few minutes.

Dice mushrooms, drain canned crab and mix together with crumbled soft goat cheese (you can also use flavored goat cheese, my favorite is the cranberry crusted, which works beautifully in this recipe).

Pat 4 filets dry and place in lightly pam-sprayed baking dish. Spread stuffing mixture over filet and cover with second filet. You can cover with tin foil and/or squeeze lemon juice over the filets during the cooking process to keep moist.

Place in oven in center rack and bake for 30 minutes or until done. (Once fish turns white and becomes flaky it is done.)

15 minutes into cooking fish, simmer carrots in small sauce pan filled with just enough water to cover carrots. Drizzle honey over carrots once almost finished cooking, turn off heat and cover
until ready to serve.

5 minutes before fish is done, open 2 pouches of Idahoan instant potatoes and add 4 cups of water in large mixing bowl. Stir and microwave for 4.5 minutes. These are the best instant potatoes ever and are only 110 calories per .5 cup serving. Choose any flavor you like to compliment your meals.
