1 Spaghetti Squash2 cups chopped fresh broccoli1 small onion diced2 diced garlic cloves1 tablespoon olive oil
Spaghetti squash is a great substitute for pasta. To prepare it, cut it in half (lengthwise). Scoop out the seeds and pulp as you would with any squash or pumpkin. Place it in a glass baking dish with about 1/2 inch of water, rind side up. Bake 40-45 minutes at 375 degrees. You can also microwave the squash for 8-10 minutes per half on high. Let the squash stand for a few minutes after baking or being microwaved. Seperate strands by running a fork through in the from stem to stern direction. Place strands in a separate bowl.
In a medium frying pan, saute` broccolli, onion, garlic and oil until vegetables are crisp tender. Add squash and heat thoroughly
