Kale and Scallops Saute

Ingredients
1 Tbsp butter or margarine (I used Kroger's Butter It's Not)5 cups Kale6 oz bay scallops2 cups Kroger frozen onion and pepper blend65 g Rice Select Whole Wheat Pearl Couscous1/4 -1/2 tsp minced garlicAny other seasonings you wish. Experiment.
Directions
Saute scallops and peppers in butter spray or 1 tbsp butter. Add the kale and garlic, saute until Kale wilts and scallops are fully cooked.

Meanwhile, make couscous, following instructions on container. Once done, either mix in with the kale and scallops or use it as a bed.
