zucchini quiche -crustless, heartsmart bisquick with egg whites

Ingredients
Zucchini, 3 cup, slicedOnions, raw, 1 smallEgg, whites1 cup*Canola Oil, .5 cupParmesan Cheese, grated, .5 cupMarjoram, dried, .5 tsp Salt, .25 tspPepper, black, .0625 tsp Parsley, dried, 1 tsp Bisquick Hearstsmart, 1 cup
Directions
mix all toghether. Pour into buttered pan or dish (7x12 dish or 8=9 inch round or square pan). Bake for 50-60 minutes or until golden brown.

    I LOVE this recipe...talk about easy! I didn't even bother to grate the zucchini...I just chopped the zucc in matchsticks and I substituted gluten-free baking mix instead of bisquick...I added scallions and I love how easy and delish and no milk in it too! I'm going to try it with spinach! - 2/8/13

    I love this recipe, I've made it for years using zucchini from my garden. I usually replace the marjoram with fresh basil and add sliced tomatos (both also from my garden). It is a great meal on a summer evening and the kids love picking the ingrediants right from our back yard! - 8/3/09
