whipped pumpkin dip

Ingredients

1 Can pumpkin (15 oz)1 box French vanilla instant pudding (3.4 oz)1/4 cup brown sugar1 teaspoon cinnamon1/2 teaspoon gingerdash nutmeg and cloves1 - 8oz tub cool whip lite
Mix together:
1 can pumpkin,
1 box French vanilla instant pudding,
1/4 cup brown sugar
1 t cinnamon
1/2 t ginger
dash each of nutmeg and cloves.
Once blended, fold in 1 oz tub lite cool whip,
Chill several hours or overnight
Serve with cinnamon graham cracker sticks or nilla wafers.
This fit tightly in a ziploc 32oz container.
I figured a serving to be 2 heaping tablespoons.

Can't wait to try it...my can of pumpkin is in the back of my cupboard just waiting for a recipe like this! Where do you get graham cracker STICKS? Is that just breaking a regular graham cracker on the perforations? - 3/11/09

You can buy graham sticks or just break them at the perforations. The low fat grahams or Cinnamon grahams are great with it - experiment - hope you liked it.

Made an Atkins-friendly version of this. Used 3/4 C whipping cream, whipped, instead of cool whip, several tablespoons Stevia Blend instead of the brown sugar, and 3 T vanilla extract instead of the pudding. Delicious!
