Rumbamel's Mexican Favorite

-1 med. zuccini, diced-2 cloves of fresh garlic, diced or minced-1/2 C diced onions, I use white-6 oz cooked boneless skinless chicken breast, diced-1 C fresh corn-1 1/2 C black beans from a can, drained and rinsed-salt and pepper to taste
--Saute the onions, garlic and zuccini in a large skillet or pot for about 3-5 minutes or until just tender. Turn off heat if needed.
--MEANWHILE, chop your chicken, cut the corn off the cob and drain and rinse your beans. Add these to the sauteed veggies and garlic. Stir and heat the corn, chicken and beans.
--Add the cooking cream and salt and pepper to taste.
--Makes 4 servings of 1 C each.
--Enjoy!!
