Atkins Friendly Breakfast Muffins

Ingredients
1 lb sausage, bacon, or ham cooked and crumbled8 oz. (approx 8 Tbsp) shredded cheese.4 whole eggs1 1/2 cup heavy cream
Directions
Using large muffin tin, spray with Pam then divide meat evenly into each opening. Top with cheese equally divided into each muffin tin. Mix 4 whole eggs with 1 1/2 cups heavy cream. Pour over meat/cheese. Bake at 400 for 30 minutes.

Serving Size: Makes 6 large cupcakes.

    I really didn't think this would be filling, but it is. I used minced ham and bell pepper, topped with Cheddar. I had way more egg and cream mixture than I needed. Also, let them sit in the hot muffin pan for about 15-20 minutes before removing so they set. - 9/26/13
